This lightened-up version of strawberries and cream is a pop worthy of any hot summer day. The berries are the star of this frozen treat, so use ripe, in-season strawberries for optimum flavour.

Ingredients

Method

In blender or food processor, purée together strawberries, cranberry juice and 1 tbsp of the honey; strain through sieve into bowl.

In separate bowl, whisk together yogurt, vanilla and remaining honey.

Spoon berry and yogurt mixtures alternately into moulds; swirl with wooden skewer. Freeze until firm, about 3 hours. (Make-ahead: Freeze for up to 3 days.)

Makes 6 to 8 servings.
