If you love the taste of classic sweet and tangy lemon squares, you'll love this lime version. The green food colouring darkens as the squares bake, so make the shade of the lime curd slightly lighter than your desired final colour.

Method

In large bowl, beat together butter, granulated sugar and salt until fluffy; stir in flour in 2 additions. Press into bottom of parchment paper–lined 13- x 9-inch (3.5 L) cake pan. Bake in 325°F (160°C) oven until golden, 28 to 32 minutes. Let cool completely.

Lime Curd: Meanwhile, in bowl, beat eggs with sugar until pale and thickened. Beat in lime zest and lime juice. Stir in flour and baking powder. Stir in a few drops of food colouring to tint mixture green (the colour will darken a bit more after baking). Pour over crust, smoothing top.

Bake in 325°F (160°C) oven until centre is set yet still jiggles slightly, 20 to 25 minutes. Let cool completely in pan, about 1 hour. Dust with icing sugar. Lift out onto cutting board; cut into squares. (Make-ahead: Layer between waxed paper in airtight container; refrigerate for up to 3 days.)
