This "applelicious" cake. It's ideal for brunch menus, too.

Ingredients

Preparation

In bowl, mix together flour, cornstarch, sugar and baking powder. With pastry blender or 2 knives, cut in butter until mixture is in small crumbs. Pour egg over top; stir with fork until dough begins to form. Press onto bottom of greased 9-inch (2.5 L) springform pan; refrigerate for 30 minutes.

Filling: In bowl, toss apples with lemon juice. Stir together sugar, cornstarch, cinnamon and allspice; toss with apples to coat. Add raisins and toss to mix. Arrange evenly over base in pan.

Topping: In bowl, combine flour with sugar. With pastry blender or 2 knives, cut in butter until mixture is crumbly. Sprinkle with vanilla, mixing in with fork.

Bake in centre of 350ºF (180ºC) oven for about 1 hour or until golden and apples are tender. Let cool for 15 minutes on rack; remove side of pan. Serve warm or let cool completely. (Cake can be covered and set aside for up to 24 hours.)
