These wholesome flavorful muffins, made without oil, can be stored in an airtight container for up to three days.

Ingredients

  • 1-1/2 cups oat bran
  • 1/2 cup whole wheat flour
  • 1/4 cup packed brown sugar
  • 1-1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup buttermilk
  • 1 egg
  • 1 tbsp grated orange rind
  • 2 tbsp orange juice
  • 1 peeled and diced apple
  • 1 cup raisins
  • 1 tbsp wheat germ

Preparation

In large bowl, combine bran, flour, sugar, baking powder, baking soda, salt and cinnamon. Combine buttermilk, egg, orange rind and juice. Stir into dry ingredients just until moistened. Stir in apple and raisins.

Spoon into greased or paper-lined muffin cups. Sprinkle with wheat germ. Bake in 400°F (200°C) oven for 18 to 20 minutes or until golden brown.
