Apples bring a fruity flavour to tender, irresistible muffins.

Ingredients

  • 2 cups all-purpose flour 2 cups all-purpose flour
  • 1 cup packed brown sugar 1 cup packed brown sugar
  • 1/2 cup wheat bran 1/2 cup wheat bran
  • 1-1/2 tsp baking powder 1-1/2 tsp baking powder
  • 1 tsp baking soda 1 tsp baking soda
  • 1 tsp cinnamon 1 tsp cinnamon
  • 1 tsp ground nutmeg 1 tsp ground nutmeg
  • 1 tsp allspice 1 tsp allspice
  • 1/2 tsp salt 1/2 tsp salt
  • 2 eggs 2 eggs
  • 1 cup sweetened applesauce 1 cup sweetened applesauce
  • 1/2 cup milk 1/2 cup milk
  • 1/3 cup vegetable oil 1/3 cup vegetable oil
  • 1 tsp vanilla 1 tsp vanilla
  • 1-1/2 cups diced peeled apples 1-1/2 cups diced peeled apples

Preparation

In large bowl, whisk together flour, sugar, wheat bran, baking powder, baking soda, cinnamon, nutmeg, allspice and salt.

In separate bowl, beat eggs; blend in applesauce, milk, oil and vanilla. Pour over dry ingredients. Sprinkle with apples; stir just until dry ingredients are moistened.

Spoon into greased or paper-lined muffin cups, filling three-quarters full. Bake in centre of 375°F (190°C) oven until tops are firm to the touch, 20 to 25 minutes. Let cool in pan on rack for 5 minutes; transfer to rack and let cool.
