Ingredients

  • Pastry:

  • Streusel:

Preparation

In saucepan, bring McIntosh and Crispin apples, sugar, cinnamon sticks and water to boil. Reduce heat, cover and simmer, stirring occasionally, until McIntosh are broken down and Crispin are softened, 10 to 15 minutes.

Uncover and cook for 5 minutes, stirring often. Discard cinnamon. Stir in raisins, butter and vanilla. Let cool completely.

Pastry: Meanwhile, in bowl, whisk flour, sugar, baking powder and salt. With pastry blender or 2 knives, cut in butter. Whisk eggs with water; stir into flour mixture and press together to form dough. Press into disc; wrap and refrigerate for 30 minutes.

Streusel: In bowl, whisk flour with sugar. With pastry blender or 2 knives, cut in butter until in crumbs. Set aside.

On lightly floured surface, roll out pastry into 16- x 12-inch (40 x 30 cm) rectangle. Press over bottom and up sides of parchment paper–lined rimmed 14- x 10-inch (35 x 25 cm) baking sheet. Trim excess above rim. Spread filling over pastry; sprinkle with streusel.

Bake in 350°F (180°C) oven until firm and golden, about 40 minutes. Let cool completely.
