This floral, fruity compote is great served on any mild-flavoured hot cereal. 

Ingredients

  • 1 cup chopped dried apricots 1 cup chopped dried apricots
  • 3 tbsp liquid honey 3 tbsp liquid honey
  • 1 strip lemon rind 1 strip lemon rind
  • 1 tbsp lemon juice 1 tbsp lemon juice
  • 1 cinnamon stick 1 cinnamon stick
  • 1/4 cup toasted pine nuts 1/4 cup toasted pine nuts

Preparation

In saucepan, stir together apricots, honey, lemon rind, lemon juice, cinnamon stick and 1-1/4 cups (300 mL) water; bring to boil.

Reduce heat and simmer, uncovered, until thickened and syrupy and apricots are tender, about 30 minutes. Discard lemon rind and cinnamon stick. Stir in pine nuts.
