Big Cookie Greetings

There's nothing better than a chocolate chip cookie — unless it's a very large one! Home economist Susan Van Hezewijk created this cookie for kids to bring along to class parties or to give as a gift. It's quick to make, uses only one bowl and will keep youngsters busy writing the message or decorating with purchased icing.
Ingredients
- 3/4 cup butter, softened
- 1-1/2 cups granulated sugar
- 2 eggs
- 1-1/2 tsp vanilla
- 1/2 tsp salt
- 2-1/2 cups all-purpose flour
- 1 cup mini chocolate chips
- 1/2 cup coloured candy-coated chocolate pieces, such as Smarties or M&Ms
- Coloured icing
Preparation
In large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, and vanilla. Stir in salt, then flour, 2 cup (125 mL) at a time, until combined. Stir in chocolate chips.
Using hands or spatula, press onto ungreased 15 x 10-inch (40 x 25 cm) rimmed baking sheet or 12-inch (30 cm) rimmed pizza pan, pressing to cover entire pan. Press candy-coated chocolate pieces around border to create frame.
Bake in centre of 325°F (160°C) oven for about 35 minutes or until firm to the touch and golden brown. Let cool on pan on rack. Leaving cookie on pan and using coloured icing, write holiday message or draw festive scene. (Make-ahead: Cover with heavy-duty foil and store for up to 2 days or freeze for up to 2 weeks.)
Additional information :
Tips: Purchase foil rimmed baking sheets and pizza pans at the grocery store so that the recipient of your gift can keep the pan.
When baking cookie on foil pan, place regular baking sheet underneath for support.
