This dessert pairs sweet apples and tangy cranberries and presents them under a crunchy golden topping.

Ingredients

  • 1 pkg (12 oz/340 g) cranberries, (fresh or frozen)
  • 1-1/2 cups apple juice
  • 3/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 10 cups sliced peeled apples, (about 7)
  • Topping:
  • 1-1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, cubed
  • 2/3 cup milk

Preparation

In heavy saucepan, bring cranberries, apple juice, sugar, cornstarch, cinnamon and nutmeg to boil over medium heat; cook, stirring, for 2 minutes or until thickened.

Spoon into 13- x 9-inch (3 L) baking dish. Arrange apples over cranberry mixture, overlapping to fit. Bake in 400°F (200°C) oven for 15 minutes.

Topping: In bowl, combine flour, all but 1 tbsp (15 mL) of the sugar, baking powder and salt. With pastry blender or 2 knives, cut in butter until in coarse crumbs. Drizzle with milk, stirring until in pebble-size chunks. Drop by spoonfuls onto apples. Sprinkle with remaining sugar. Bake for 45 minutes or until golden.

Additional information :

Tip: Use pie apples.
