Ingredients

  • 3 cups all-purpose flour 3 cups all-purpose flour

  • 1/2 cup cold butter , cubed1/2 cup cold butter, cubed
  • 1/2 cup lard , cubed1/2 cup lard or butter, cubed
  • 1 egg 1 egg
  • 2 tsp lemon juice 2 tsp lemon juice
  • Ice water Ice water

Preparation

In bowl, whisk flour with salt. Using pastry blender or 2 knives, cut in butter and lard until mixture resembles fine crumbs. In glass measure, whisk egg with lemon juice. Add enough ice water to make 2/3 cup (150 mL). Drizzle over flour mixture, stirring with fork until mixture clumps together. Divide in half; press into discs. Wrap and chill for 30 minutes. (Make-ahead: Refrigerate for up to 2 days or freeze for up to 3 months.)
