So simple and satisfying on a summer afternoon, this looks wonderful sprinkled with fresh wild blueberries and served in frosted ice-cream dishes.

Ingredients

  • 5 cups sliced plums , (about 2 lb/1 kg)5 cups sliced plums, (about 2 lb/1 kg)
  • 3/4 cup granulated sugar 3/4 cup granulated sugar
  • 1 strip orange rind 1 strip orange rind

Preparation

In small saucepan, bring plums, sugar, orange rind and 3/4 cup (175 mL) water to boil. Reduce heat, cover and simmer, stirring occasionally, for 20 minutes or until plums are very soft. Transfer to food processor or blender; pur? in batches if necessary, until smooth. Pour into bowl; refrigerate until cold.

Freeze in ice-cream machine according to manufacturer's instructions. (Alternatively, pour into shallow metal pan; freeze for 3 to 4 hours or until almost firm. Break up into chunks and transfer to food processor; pur?until smooth. Freeze in chilled airtight container for 1 hour or until firm.) Store in freezer for up to 2 days.
