A summer dessert that can be assembled in minutes, these parfaits are a refreshing change from higher-fat ice cream.

Ingredients

  • 12 amaretti, ginger , or vanilla cookies12 amaretti, ginger, or vanilla cookies
  • 1 cup raspberries or sliced strawberries 1 cup raspberries or sliced strawberries
  • 1 banana , sliced1 banana, sliced
  • 1/2 tsp grated orange rind 1/2 tsp grated orange rind
  • 2 cups vanilla yogurt 2 cups vanilla yogurt

Preparation

In plastic bag, crush cookies just enough to leave a few large pieces and make 1 cup (250 mL) crumbs; set aside.

In bowl, mix together raspberries and banana; set aside. Stir grated orange rind into yogurt.

Dividing evenly, spoon half of the cookie crumbs into 4 parfait or wine glasses. Top with half of the yogurt mixture then half of the fruit. Repeat layers once.
