Fruity Frozen Yogurt

Scoop this icy summer treat into chilled glasses and add more fresh fruit.

Ingredients

  • 3 cups cubed peeled cantaloupes
  • 1/2 cup plain yogurt
  • 1/3 cup instant dissolving (fruit/berry) sugar
  • 1 tbsp orange juice

Preparation

In food processor, process cantaloupe until smooth. Blend in yogurt, sugar and orange juice; freeze in ice-cream maker following manufacturer's instructions or pan-freeze (see Tip).

Serve immediately or transfer to airtight container and freeze for up to 1 day. If making ahead, process in food processor before serving for smoother texture.

Frozen Fruit Method: At least 5 hours before serving, cover and freeze fruit in single layer on baking sheet until solid. In food processor, process fruit with sugar until coarsely chopped. Stir together yogurt and orange juice. With machine running, gradually pour yogurt mixture through feed tube. Process until smooth and creamy. Serve immediately.

Variations
Peach Frozen Yogurt: Substitute sliced peaches for the cantaloupe.

Strawberry Frozen Yogurt: Substitute sliced strawberries for the cantaloupe.

Raspberry Frozen Yogurt: Purée 3 cups (750 mL) raspberries; strain through sieve into bowl to remove seeds. Increase sugar to 1/2 cup (125 mL).

TIP: To pan-freeze, pour mixture into shallow metal baking pan, cover and freeze for 3 to 4 hours or until almost firm. Break up mixture and process in food processor, in batches if necessary, until smooth and creamy. Place in chilled airtight container and freeze for 1 hour or until firm.
