Ingredients

  • 1/4 cup lard 1/4 cup lard
  • 1/4 cup granulated sugar 1/4 cup granulated sugar
  • 1/2 cup molasses 1/2 cup molasses
  • 1-1/2 cup whole wheat flour 1-1/2 cup whole wheat flour
  • 1-1/2 tsp ginger 1-1/2 tsp ginger
  • 1 tsp baking soda 1 tsp baking soda
  • 1/2 tsp cloves 1/2 tsp cloves
  • 1/2 tsp cinnamon 1/2 tsp cinnamon
  • 1 Pinch salt 1 Pinch salt
  • 2 tbsp white vinegar 2 tbsp white vinegar

Preparation

In small saucepan, melt lard with sugar and molasses over low heat. Let cool.

In large bowl, stir together flour, ginger, soda, cloves, cinnamon and salt. Stir in molasses mixture and vinegar.

Drop by small spoonfuls onto greased baking sheets. Bake in 350°F (180°C) oven for 8 to 10 minutes or until set. Let cool for 1 to 2 minutes on baking sheets, then remove cookies to racks to cool completely.
