Lemon Lime Tofu Zinger
This recipe makes 8 servings
Ingredients
- 2/3 cup granulated sugar 2/3 cup granulated sugar
- 2/3 cup water 2/3 cup water
- 2 lemons , grated and squeezed to make 3/4 cup juice and 1 tbsp (15 mL) rind2 lemons, grated and squeezed to make 3/4 cup juice and 1 tbsp (15 mL) rind
- 2 limes , grated and squeezed to make 3/4 cup juice and 1 tbsp (15 mL) rind2 limes, grated and squeezed to make 3/4 cup juice and 1 tbsp (15 mL) rind
- 1 pkg soft silken tofu , and juice, stir in rind1 pkg soft silken tofu, and juice, stir in rind
Preparation
Simple Syrup: In saucepan, bring sugar and water to boil, stirring to dissolve sugar. Let cool completely.
Wash, prepare lemons and limes and pur?with tofu and juice to make Fresh Fruit Pur? Mix with 2 batches of Simple Syrup.
Freeze in shallow metal cake pan for about 4 hours or until firm. Break into chunks; pur?in food processor. Pack into airtight container and refreeze for 4 hours or until firm or for up to 2 days. (Or freeze in ice cream machine according to manufacturer's instructions.)
