Passover sweets

Enjoy six contemporary Seder-appropriate desserts. We play up Passover ingredients, such as egg whites, nuts and cocoa, for loads of body and flavour while avoiding restrictions such as those of flour (grain products) and leavening agents (baking powder, baking soda and yeast). Use Kosher ingredients as appropriate. These recipes are dairy-free. We offer non-Passover variations as well, so you can enjoy this trio of fabulous desserts at celebrations all through the year.

Icing sugar
If you cannot find Kosher icing sugar, make your own by whirling 1/4 cup (50 mL) granulated sugar and 2 tsp (10 mL) potato starch until powdery; pass through a fine sieve to remove coarse sugar.
