Ingredients

  • 7 cups sliced peeled peaches
  • 1/3 cup packed brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • Biscuits:
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3 tbsp packed brown sugar
  • 1-1/2 tsp baking powder
  • 1 pinch salt
  • 1/4 cup butter, cubed
  • 1/2 cup milk

Preparation

Biscuits: In bowl, whisk together all-purpose and whole wheat flours, sugar, baking powder and salt. Using pastry blender or 2 knives, cut in butter until in coarse crumbs. Using fork, stir in milk to make ragged dough. Set aside.

In large bowl, toss together peaches, sugar, flour and lemon juice. Transfer to 8-inch (2 L) square glass baking dish. Bake in 350°F (180°C) oven for 20 minutes.

Drop dough by 9 heaping 1 tbsp (15 mL) onto hot fruit mixture. Bake until biscuits are golden and no longer wet underneath, about 50 minutes.

With slotted spoon, lower a few peaches at a time into pot of boiling water; blanch until skin starts to peel away, about 30 seconds. Submerge immediately in ice water until cool enough to handle; peel off skins.
