What better way to end a meal than with this smooth, natural ice? Serve in tall martini glasses for an elegant touch.
Ingredients
- 4 cups chopped peeled peaches 4 cups chopped peeled peaches
- 2 cups granulated sugar 2 cups granulated sugar
- 2 tbsp lemon juice 2 tbsp lemon juice
Preparation
In food processor or blender, purée peach mixture until smooth, about 2 minutes. Press through fine sieve into bowl.
Pour into 13- x 9-inch (3.5 L) metal cake pan. Place plastic wrap directly on surface; freeze until firm, about 4 hours. Break into chunks; purée in food processor. Pack into airtight container and freeze until firm, about 4 hours. (Or freeze in ice-cream machine according to manufacturer's instructions.) Make-ahead: Freeze for up to 2 days.
