What better way to end a meal than with this smooth, natural ice? Serve in tall martini glasses for an elegant touch.

Ingredients

  • 4 cups chopped peeled peaches
  • 2 cups granulated sugar
  • 2 tbsp lemon juice

Preparation

In saucepan, combine peaches, sugar, 1 cup (250 mL) water and lemon juice; bring to boil over medium heat. Reduce heat and simmer until peaches are tender, about 15 minutes. Let cool; refrigerate, uncovered, until cold, about 45 minutes.

In food processor or blender, purée peach mixture until smooth, about 2 minutes. Press through fine sieve into bowl.

Pour into 13- x 9-inch (3.5 L) metal cake pan. Place plastic wrap directly on surface; freeze until firm, about 4 hours. Break into chunks; purée in food processor. Pack into airtight container and freeze until firm, about 4 hours. (Or freeze in ice-cream machine according to manufacturer's instructions.) Make-ahead: Freeze for up to 2 days.
