Using granulated instead of brown sugar creates an interesting crunchy topping.

Ingredients

  • 6 cups quartered pitted firm ripe prunes 6 cups quartered pitted firm ripe prunes or purple plums
  • 1/2 cup granulated sugar 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour 2 tbsp all-purpose flour
  • Topping:
  • 1 cup all-purpose flour 1 cup all-purpose flour
  • 2/3 cup granulated sugar 2/3 cup granulated sugar
  • 1 pinch cinnamon 1 pinch cinnamon
  • 1 pinch salt 1 pinch salt
  • 1/3 cup cold butter , cubed1/3 cup cold butter, cubed

Preparation

Topping: In bowl, whisk together flour, sugar, cinnamon and salt. Using pastry blender, cut in butter until crumbly. Press into clumps; set aside.

In large bowl, combine plums, sugar and flour. Spread in greased 8-inch (2 L) square glass baking dish; sprinkle with topping.

Bake in 375°F (190°C) oven until bubbly and topping is golden and crisp, 45 to 60 minutes. Serve warm.
