Ingredients

  • 1/4 cup shelled green pumpkin seeds , (pepitas)1/4 cup shelled green pumpkin seeds, (pepitas)
  • 1/4 cup shelled unsalted sunflower seeds 1/4 cup shelled unsalted sunflower seeds
  • 2 tbsp sesame seeds 2 tbsp sesame seeds
  • 2 tbsp flaxseeds , (optional)2 tbsp flaxseeds, (optional)
  • 1/2 tsp baking powder 1/2 tsp baking powder
  • 1/2 tsp baking soda 1/2 tsp baking soda
  • 1 pinch cinnamon 1 pinch cinnamon

  • 1/2 cup raisins 1/2 cup raisins

Preparation

In large bowl, beat together butter, granulated sugar and brown sugar until fluffy; beat in egg. Beat in milk and vanilla.

In separate bowl, whisk together flour, oats, pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds (if using), baking powder, baking soda, cinnamon and sa< stir into butter mixture in 2 additions. Stir in raisins.

Drop by rounded 1 tbsp (15 mL), about 2 inches (5 cm) apart, onto parchment paper–lined baking sheets. Bake in 350°F (180°C) oven until firm to the touch, about 12 minutes. Let cool on pans on racks for 2 minutes; transfer to racks and let cool completely.
