This tasty, not-too-sweet sauce is particularly delectable over ice cream.

Ingredients

  • 8 cups halved strawberries 8 cups halved strawberries
  • 1/4 cup water 1/4 cup water
  • 1 tbsp coarsely grated orange rind 1 tbsp coarsely grated orange rind
  • 1 cup granulated sugar 1 cup granulated sugar
  • 1/2 cup corn syrup 1/2 cup corn syrup
  • 1/2 cup orange juice 1/2 cup orange juice

Preparation

In large heavy saucepan, bring strawberries, water and orange rind to boil over medium heat; reduce heat to medium-low and simmer, covered, for 10 minutes.

Stir in sugar, corn syrup and orange juice; return to boil and boil, uncovered, for 10 minutes, stirring often.

Pour into hot sterilized canning jars, leaving 1/4-inch (5 mm) headspace. Seal with lids and screw bands applied firmly without forcing. Process in boiling water bath for 10 minutes. Let cool on rack; check to ensure proper seal. Label and store in cool, dark dry place.
