Sunny Apricot Spread
This recipe makes 12 1 tbsp (15 mL) servings
This topping for toast, bread or bagels gives you a real boost of vitamin A and is lower in sugar than jam.
Ingredients
- 3/4 cup orange juice
- 1/2 cup dried apricots
- 2 tsp granulated sugar
Preparation
In small saucepan, combine orange juice, dried apricots and granulated sugar. Bring to boil; reduce heat, cover and simmer for 15 minutes, stirring occasionally. Let cool.
Pur?in blender or food processor; transfer to jar or small bowl. (Spread can be covered and refrigerated for up to 1 week)
