Cook this on the barbecue side-burner or in the microwave oven.
Ingredients
- 2 cups water 2 2cups cupswater
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1 cup long grain rice 1 1cup cuplong grain rice
- 2 tbsp carrots , shredded2 2tbsp tbspcarrotcarrots, shredded
- 1 tsp grated lemon rind 1 1tsp tspgrated lemon rind
Preparation
In saucepan, bring water and salt to boil; add long-grain rice. Reduce heat, cover and simmer until tender and liquid is absorbed, about 20 minutes. Stir in carrot and lemon rind.
