Cook this on the barbecue side-burner or in the microwave oven.

Ingredients

  • 2 cups water
  • 1/4 tsp salt
  • 1 cup long grain rice
  • 2 tbsp carrots, shredded
  • 1 tsp grated lemon rind

Preparation

In saucepan, bring water and salt to boil; add long-grain rice. Reduce heat, cover and simmer until tender and liquid is absorbed, about 20 minutes. Stir in carrot and lemon rind.
