Basmati rice, a long-grain rice with a wonderfully toasty, nutty flavour, is available in health food stores, Indian markets and some supermarkets.
Ingredients
- 1 tbsp butter 1 1tbsp tbspbutter
- 1 small red onions , cut in thin wedges1 1small smallred onionred onions, cut in thin wedges
- 1/2 cup basmati rice 1/2 1/2cup cupbasmati rice or parboiled rice
- 1 bay leaf 1 1bay leafbay leaves
- 1/2 tsp chopped fresh thyme 1/2 1/2tsp tspchopped fresh thyme
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- pinch pepper pinch pinchpepper
- 1 cup chicken stock 1 1cup cupchicken stock
- 1/4 cup toasted and halved cashews 1/4 1/4cup cuptoasted and halved cashewcashews
- Fresh thyme sprigs , optionalFresh thyme sprigs, optional
Preparation
In heavy saucepan, heat butter over medium heat; cook onion for 3 minutes or until softened. Stir in rice, bay leaf, thyme, salt and pepper; cook, stirring, for 1 minute.
Pour in stock; bring to boil. Cover and reduce heat to low; simmer for about 20 minutes or until rice is tender and liquid absorbed. Discard bay leaf. Sprinkle with cashews; garnish with thyme sprigs (if using).
