5 beat-the-heat barbecues

It's that time of year, when most Canadians barbecue two or three times a week. To make it easy, we've created five new menus that are convenient (the whole meal cooks on the grill), quick (how does 30 minutes or less sound?), streamlined (each menu comes with a work plan) and nutritious (there's healthy portion control, the trimming of unnecessary fat to reduce calories and flare-ups, and a good balance of in-season vegetables).

• Drain and slice tofu.

• Marinate chicken.
• Cut peppers into quarters.
• Prepare salsa; set aside.
• Grill chicken and peppers.
• Shred lettuce and cheese.
• Wrap tortillas in foil; heat on grill.

Micro-Grilled Potato Skewers

• Microwave potatoes.
• Rub flavouring mixture on chops.
• Combine marinade for apples and onion.
