Ingredients

Preparation

In large nonstick skillet, heat oil over medium-high heat; stir-fry beef, in batches, until browned but still pink inside, about 3 minutes. Transfer to plate.

Add onion, mushrooms, garlic, yellow pepper, oregano, salt and pepper to skillet; saute until liquid is evaporated, about 5 minutes. Return beef and any accumulated juices to pan; heat through.

Cut baguette lengthwise in half almost but not all the way through. If desired, remove some of the centre.

Spoon half of the beef mixture on bottom of loaf. Top with artichokes and remaining beef mixture. Cover with top of loaf. Cut into sections.

Additional information :

Substitution:

Replace the beef strips with sliced chicken breasts or boneless pork chops. Replace marinated artichoke hearts with 1/2 cup (125 mL) sliced drained oil packed sun-dried tomatoes.
