4 cups (1 L) torn lettuce
1-1/2 cups (375 mL) diced Rosemary Roasted Beets
1/2 cup (125 mL) crumbled blue cheese
1/4 cup (50 mL) sliced almonds, toasted
1 tbsp (15 mL) each extra-virgin olive oil and wine vinegar
Preparation:
On 4 salad plates, divide lettuce, beets, blue cheese and almonds. Drizzle each with olive oil and wine vinegar.
