Look for canned lychees in the Asian section of the grocery store, and be sure to pick up enough ice. Make the “eyeballs” ahead of time so you can easily pop them into drinks to serve.

Ingredients

  • 1 raspberry
  • 1 canned lychee in syrup
  • 1/3 cup orange juice
  • 1/4 cup pineapple juice
  • 1 oz white rum
  • 1/2 oz triple sec

Method

Stuff raspberry into cavity of lychee; thread onto cocktail skewer.

Fill cocktail shaker with ice. Add orange juice, pineapple juice, rum and triple sec. Shake vigorously to blend and chill. Strain into martini glass. Garnish with lychee “eyeball.”
