See the world through rose-coloured glasses with this pink gin-spiked sipper. It's sure to become your go-to cocktail of the season. The rhubarb syrup yields enough for about six servings.

Method

In cocktail shaker, muddle mint leaves with lime juice using handle of wooden spoon; add enough ice to fill shaker. Add gin and Rhubarb Syrup; cover and shake vigorously to combine. Strain into champagne coupe; top with club soda.

Garnish: Garnish with lime and mint leaves; rest rhubarb curl on rim of glass.?

Tip from The Test Kitchen: To make rhubarb curls, using a sharp vegetable peeler, shave a stalk of rhubarb lengthwise into thin strips. Place in bowl of ice water for 10 minutes to firm up, twisting gently to help curls form.
