Bibb Lettuce with Tomato Vinaigrette

Spring means a great selection of lettuces and salads with a bit of flair. Bibb or Boston lettuce fills the bill, especially when tossed with a tomato vinaigrette and garnished with edible petals.

Ingredients

  • 1 tsp 1tspbalsamic vinegar
  • 1/4 tsp 1/4tspDijon mustard
  • 1 1small clove garliccloves of garlic, minced
  • pinch pinchsalt
  • pinch pinchpepper
  • 1 tbsp 1tbspolive oil
  • 2 tbsp 2tbspfinely diced tomatotomatoes, seeded
  • Bibb lettuce or Boston leaf lettuce, wedges
  • 1 1tomatotomatoes, chopped
  • 1 tbsp 1tbspchopped fresh parsley

Preparation

In bowl, whisk together vinegar, mustard, garlic, salt and pepper; whisk in oil until blended. Stir in finely diced tomato. Arrange lettuce wedges around serving plate; mound chopped tomato in center. Drizzle dressing over lettuce; sprinkle with parsley.
