Bibb Lettuce with Tomato Vinaigrette

Spring means a great selection of lettuces and salads with a bit of flair. Bibb or Boston lettuce fills the bill, especially when tossed with a tomato vinaigrette and garnished with edible petals.
Ingredients
- 1 tsp balsamic vinegar
- 1/4 tsp Dijon mustard
- 1 small clove garlic, minced
- pinch salt
- pinch pepper
- 1 tbsp olive oil
- 2 tbsp finely diced tomatoes, seeded
- Bibb lettuce or Boston leaf lettuce, wedges
- 1 tomato, chopped
- 1 tbsp chopped fresh parsley
Preparation
In bowl, whisk together vinegar, mustard, garlic, salt and pepper; whisk in oil until blended. Stir in finely diced tomato. Arrange lettuce wedges around serving plate; mound chopped tomato in center. Drizzle dressing over lettuce; sprinkle with parsley.
