A simply dressed salad makes an excellent showcase for locally grown greens. Peruse the market stalls for your favourites. Keep an eye out for locally made vinegars as well.

Ingredients

  • 4 cups 4cupstorn Boston leaf lettuce
  • 4 cups 4cupstorn radicchio lettuce
  • 2 cups 2cupssliced belgian endive
  • 2 cups 2cupstorn escarole, or frise
  • 1 1sliced green oniongreen onions
  • 1/3 cup 1/3cupextra virgin olive oil
  • 1/4 cup 1/4cupcider vinegar, wine vinegar, or fruit vinegar
  • 1/4 tsp 1/4tspsea salt, or salt
  • 1/4 tsp 1/4tsppepper

Preparation

In large bowl, toss together Boston lettuce, radicchio, endive, escarole and green onion. Sprinkle with oil, vinegar, salt and pepper; toss to combine.
