The sweetness of honey perfectly balances the sharpness of the greens. Frisee is a nice addition, if available.

Ingredients

  • 8 cups torn escarole or romaine lettuce
  • 6 cups torn radicchio leaves
  • 2 cups torn frisée lettuce, (optional)
  • 1 cup thinly sliced red onions
  • Honey Dijon Dressing
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp liquid honey
  • 1-1/2 tsp Dijon mustard
  • 1 Pinch salt
  • 1 Pinch pepper

Preparation

Honey Dijon Dressing: In large bowl, whisk together oil, vinegar, honey, mustard, salt and pepper. Add escarole, radicchio, frisee (if using) and onion; toss to coat.
