Savour the flavours of the harvest in this side dish, which is just the right colour combination for Halloween.
Ingredients
- 3 cups chicken stock 3 3cups cupschicken stock
- 2 cups long-grain rice 2 2cups cupslong-grain rice
- 1/2 cup drained rinsed canned black beans 1/2 1/2cup cupdrained rinsed canned black beanblack beans
- 1/2 cup diced peeled butternut squash 1/2 1/2cup cupdiced peeled butternut squash
- 1 tbsp butter 1 1tbsp tbspbutter
- 1/2 tsp salt 1/2 1/2tsp tspsalt
Preparation
In saucepan, bring stock to boil. Add rice, beans, squash, butter and salt ; return to boil. Reduce heat; cover and simmer until rice is tender and no liquid remains, 20 minutes. (Make-ahead: Cover and refrigerate for up to 1 day. To reheat, microwave at Medium-High/70% for 5 to 7 minutes, stirring occasionally with fork.)
