3 cups (750 mL) chicken stock
2 cups (500 mL) long-grain rice
1/2 cup (125 mL) drained rinsed canned black beans
1/2 cup (125 mL) diced peeled butternut squash
1 tbsp (15 mL) butter
1/2 tsp (2 mL) salt
Preparation:
In saucepan, bring stock to boil. Add rice, beans, squash, butter and salt ; return to boil. Reduce heat; cover and simmer until rice is tender and no liquid remains, 20 minutes. (Make-ahead: Cover and refrigerate for up to 1 day. To reheat, microwave at Medium-High/70% for 5 to 7 minutes, stirring occasionally with fork.)
