Black Bean Drumsticks

Serve this for dinner with Confetti Pepper Rice, but save two drumsticks for your child's lunch the next day. Black beans and garlic sauce is a Chinese convenience item available at most grocery stores. Made of seasoned fermented black beans, its sharp and salty flavour seems universally appreciated by children.
Ingredients
- 1 tbsp vegetable oil
- 8 skinless chicken drumsticks
- 1 small onion, chopped
- 2 tsp grated gingerroot
- 1/3 cup chicken stock
- 1 tbsp cornstarch
- 3 tbsp black bean garlic sauce
- 2 tsp sesame oil
- 1/2 tsp granulated sugar
- 1 tbsp sesame seeds, toasted
Preparation
In skillet, heat oil over medium-high heat; brown drumsticks. Transfer to plate.
Drain off any fat in pan. Fry onion and ginger over medium heat until softened, about 5 minutes.
Return chicken and any accumulated juices to pan. Add chicken stock and 2/3 cup (150 mL) water; bring to boil. Reduce heat, cover and simmer until juices run clear when chicken is pierced.
Meanwhile, in small bowl, whisk cornstarch with 1 tbsp (15 mL) water; stir into liquid in pan along with black-bean-and-garlic sauce, sesame oil and sugar; cook until thickened and bubbly, about 1 minutes. Sprinkle with sesame seeds.
Additional information :
Tip: Reserve two drumsticks to pack in your child's lunch. Many children are fans of cold chicken, but if yours isn?t, heat it up and wrap to send in a insulated lunchbox. Add a whole wheat bun, fruit, yogurt and perhaps a cookie or two.
