Black Currant Liqueur
French cr? de cassis is the inspiration for this sweet and fruity liqueur. This drink makes a refreshing cocktail by topping 1 oz (25 mL) with 4 oz (125 mL) chilled white wine, sparkling white wine or soda water.

Suggested Recipes

3/4 cup (175 mL) granulated sugar
3 cups (750 mL) fresh or frozen black currants
3 cups (750 mL) vodka
1/4 cup (50 mL) brandy (optional)
Preparation:
In saucepan, whisk sugar with 1/4 cup (50 mL) water over medium heat until clear; remove from heat.
Stir in black currants; let stand for 5 minutes.
Stir in vodka, and brandy (if using).
In batches, transfer black currant mixture to blender and pur? Divide between 2 sterilized wide-mouthed 4-cup (1 L) jars with tight-fitting lids.
Seal and let stand in cool dark place for at least 5 days or for up to 3 months, shaking jars periodically.
Strain through cheesecloth-lined sieve, gently pressing black currants to release liquid. Pour liqueur into decorative bottle. (Make-ahead: Store for up to 1 year.)
