Prepare the toppings and make the patties ahead, ready to broil just before serving. Call ahead to your local bakery to order custom-baked mini-buns.

Preparation

In bowl, whisk eggs with water; mix in crumbs, onion, mustard, Worcestershire sauce, salt and pepper. Using fork, mix in beef. Shape into sixteen 1/4-inch (5 mm) thick patties. Place on foil-lined baking sheet. (Can be covered with plastic wrap and refrigerated for up to 8 hours.) Broil, turning once, for about 10 minutes or until no longer pink inside.

Cut buns in half; place burgers in between.

Vaeiations:
Regular-Size Burgers: Divide meat into eight 3/4-inch (2 cm) thick patties; broil, turning once, for about 13 minutes or until no longer pink inside. Place between regular buns. Makes 8 burgers.

Teeny-Tiny Burger Bites: Divide meat into sixty-four 1/2-inch (1 cm) thick patties; broil, turning once, for about 8 minutes or until no longer pink inside. Place between mini pita breads or 1-inch (2.5 cm) bread rounds cut with cookie cutter and toasted under broiler. Makes 64 bite-size burgers.
