Bocconcini Bites
Delightful cocktail sticks look pretty standing in martini glasses or vases. For fun, make all four varieties and station them around the room.

24 "cherry" bocconcini cheese balls
12 thin slices Genoa or Calabrese salami, halved
24 pimiento-stuffed green olives
Preparation:
Onto each of 24 cocktail skewers or toothpicks, thread 1 bocconcini ball, 1 loosely rolled salami slice and 1 olive. (Make-ahead: Cover and refrigerate for up to 4 hours.)

Manchego Bites: Skewer rolled strips of jarred roasted red peppers; 3/4-inch (2 cm) cubes Manchego cheese; and anchovies or almond-stuffed olives.Beemster Bites: Skewer 3/4-inch (2 cm) cubes of Beemster cheese or aged Gouda cheese; rolled strips of Westphalian ham; and gherkins or small pickles.
Salmon Bites: Skewer 3/4-inch (2 cm) cubes cucumber; rolled strips of Gin-Cured Gravlax or smoked salmon; and caper berries or capers.
