These tasty little bundles of leftover bread stuffing, egg, cheese and smoky ham make a yummy dish to start the day. They're like a full weekend breakfast in convenient little packages.

- 12 slices Black Forest ham (about 350 g)
- 1 1/2 cup bread stuffing chopped
- 12 eggs
- 1/3 cup shredded mozzarella cheese
- 1/4 teaspoon pepper
MethodGrease 12 muffin cups; press 1 ham slice onto bottom and up sides of each cup. Divide stuffing among cups, pressing gently up sides to make wells in centres.
Crack 1 egg into each well; sprinkle with mozzarella cheese and pepper. Bake in 375 F (190 C) oven until whites are just set but yolks are still slightly runny, 12 to 15 minutes.
Let cool for 3 to 5 minutes. To serve, run knife around edge of each to loosen.
