Brie with Raspberry Chipotle Sauce
This brilliant red fruity sauce plays along with the creamy flavour of Brie.

1 round (8 oz/230 g) brie cheese
Raspberry Chipotle Sauce
1 cup (250 mL) frozen raspberries
1/4 cup (50 mL) frozen raspberry cocktail concentrate
1/4 cup (50 mL) port, red wine or frozen raspberry cocktail concentrate
1 tbsp (15 mL) chopped chipotle pepper in adobo sauce
Preparation:
Raspberry Chipotle Sauce: Set aside 1/4 cup (50 mL) of the raspberries on paper towel. In small saucepan, bring remaining raspberries, raspberry cocktail, Port and chipotle pepper to boil; reduce heat and simmer until slightly thickened, about 5 minutes. Transfer to sieve; press through into bowl. (Make-ahead: Cover and refrigerate for up to 3 days.)
Place Brie on parchment paper-lined or greased baking sheet; bake in 350°F (180°C) oven until softened, about 10 minutes.
Pool half of the sauce onto serving plate; top with Brie. Drizzle with remaining sauce; sprinkle with reserved raspberries. To serve, cut into wedges.

Brie with Cranberry Chipotle Sauce: Replace raspberries and raspberry cocktail concentrate with cranberries and 1/4 cup (125 mL) cranberry concentrate.
