Broccoli Couscous
Servings: 4
Ingredients:

1 tbsp (15 mL) vegetable oil
1 onion, chopped
2 cloves garlic, minced
1/3 cup (75 mL) slivered almonds
1/2 tsp (2 mL) crumbled dried sage
1/4 tsp (1 mL) each salt and pepper
1-1/4 cups (300 mL) vegetable stock
1 carrot, grated
2 cups (500 mL) frozen cut broccoli, sliced
1 cup (250 mL) couscous
Preparation:
In saucepan, heat vegetable oil over medium heat. Fry onion, garlic, almonds, sage, salt and pepper. Add vegetable stock, carrot and broccoli. Bring to boil; add couscous. Remove from heat. Cover, let stand until liquid is absorbed, about 5 minutes.
