Broccoli Mac and Cheese
This recipe makes 4 servings

Ingredients
- 2-3/4 cups 2-3/4cupsmacaroni
- 4 cups 4cupsfrozen cut broccoli
- 1 1sweet red peppersweet red peppers, diced
- 1 cup 1cupshredded Cheddar cheese
- 1/2 cup 1/2cupherbed cream cheese
- 3 3green oniongreen onions
- 1 tsp 1tspDijon mustard
- 1/4 tsp 1/4tspeach salt and pepper
Preparation
In large pot of boiling salted water, cook macaroni until almost tender, 6 minutes. Add broccoli and red pepper; boil until pasta is tender but still firm, 2 minutes. Reserving 1/2 cup (125 mL) liquid, drain and return to pot over medium-low heat. Stir in Cheddar cheese, reserved liquid, cream cheese, onions, Dijon mustard, salt and pepper until melted.
