Broccoli Mac and Cheese

Ingredients:

2-3/4 cups (675 mL) macaroni
4 cups (1 L) frozen cut broccoli
1 sweet red pepper, diced
1 cup (250 mL) shredder cheddar cheese
1/2 cup (125 mL) herbed cream cheese
3 green onions
1 tsp (5 mL) dijon mustard
1/4 tsp (1 mL) each salt and pepper
Preparation:
In large pot of boiling salted water, cook macaroni until almost tender, 6 minutes. Add broccoli and red pepper; boil until pasta is tender but still firm, 2 minutes. Reserving 1/2 cup (125 mL) liquid, drain and return to pot over medium-low heat. Stir in Cheddar cheese, reserved liquid, cream cheese, onions, Dijon mustard, salt and pepper until melted.
