Louise carries bags of measured tortilla ingredients and adds 2 tbsp (25 mL) dried egg powder for the egg. Her choice of meat in the Northwest Territories is caribou, which she dries. Freeze the meat and plan to make this meal the first night out.
Ingredients
- Tortillas
- 2 cups water
- 3/4 cup cornmeal
- 3/4 cup all-purpose flour
- 1 egg
- Filling
- 2 tsp vegetable oil
- 1 onion, chopped
- 3/4 lb lean ground beef
- 1/2 cup taco sauce
- Salt
- Pepper
- Toppings, of your choice
Preparation
Tortillas: In bowl, combine water, cornmeal, flour and egg until smooth. (While cooking, stir batter often to prevent cornmeal from sinking.) Heat skillet over medium heat; grease lightly. Pour in about 1/3 cup (75 mL) batter, swirling pan to spread batter; cook for 1 minute on each side.
Filling: In skillet, heat oil over medium-high heat; cook onion for 3 minutes or until softened. Add beef; cook, breaking up chunks, for 3 to 5 minutes or until no longer pink.
Divide filling among tortillas; sprinkle with topping. Fold tortilla over filling to serve.
