I received some cookie recipes and they all call for unbleached flour. What is that exactly?

Unbleached flour is actually all-purpose flour. All-purpose flour is available both bleached and unbleached. The bleaching process only makes the flour white. Their properties are the same. Unbleached flour is becoming more available in the supermarket. Just check the labels. -- Heather Howe
