My cupcakes never seem to have nice risen domes on them (even when they're from a mix) like muffins get. I test for doneness using a toothpick and they appear done, yet I always wind up with "flat-tops."
Cupcakes do not have peaked tops like muffins. They tend to have slightly rounded tops but are flatter than muffins because they are usually iced.
