There is no difference as long as the coals are arranged properly; they are hotter if banked together and cooler if spread apart. Here's a handy guide to checking the temperature. Hold your hand, palm side down, 2 to 3 inches (5 to 8 cm) above rack until heat feels uncomfortable. Count the seconds that you can keep your hand in place: 5 seconds is low heat; 4 seconds, medium heat; 3 seconds, medium-high heat; 2 seconds, high heat.
