What should I be looking for when buying pots?
Pots should be a once-in-a-lifetime purchase. The most reasonably priced, low maintenance cookware is heavy-duty stainless steel. Stainless steel, however, is a poor conductor of heat, so a layer of copper or aluminum should be sandwiched between the stainless steel on the bottom for better conductivity.
