Can I substitute one variety of squash for another?

Yes. At the time of year when winter squash are harvested, you may want to try different varieties in your favourite recipes. Here is a quick substitution list to help you along in your culinary creations. * When a recipe calls for peeled squash, choose smooth-skinned butternut or delicata squash. * Acorn, pepper or sweet dumpling squash are ideal for stuffing. * For baking in halves or chunks, buttercup, banana, hubbard, turban, kuri and other hard-skinned squash are suitable. To bake; place halves (with seeds and fibers scooped out) cut side down in greased baking dish or on baking sheet in 400°F (200°C) oven for about 45 minutes or until soft.
