My cake fell in the centre -- what went wrong?

A fallen cake can be the result of many factors. The most common is undercooking. To test a cake for doneness, use a toothpick or a cake tester. Insert it in the centre of the cake then slowly remove it. It should come out clean, with no crumbs clinging. Opening the oven door during the first 15 minutes of baking is another common mistake.
