My cake fell in the centre -- what went wrong?

To test a cake for doneness, use a toothpick or a cake tester. Insert it in the centre of the cake then slowly remove it. It should come out clean, with no crumbs clinging. Opening the oven door during the first 15 minutes of baking is another common mistake.
