How do I bake gingerbread cookies so they are soft?

For softer gingerbread cookies, look for recipes with high amounts of sugar and molasses. Then, bake them for the least amount of the times the recipe gives, so that they are cooked, but still soft. Check your oven temperature to make sure it is correct. Commercially-made soft gingerbread cookies have used shortening, but we recommend not using the shortening because of trans fats.
