What is the difference in between semi-sweet and bitter sweet chocolate?

The semi-sweet is just a little sweeter than bitter sweet, but generally speaking, you can use them interchangeably. As an added note, there have been many more bittersweet chocolates coming onto the market in recent years, and the ones we have seen in the test kitchen tend to be of a higher quality.
